All you need:
- 1 Lime
- 30ml of simple sugar syrup
- 60ml of Pennant Gin
- 6 Mint leaves
- 180ml of Fever-Tree soda water
- Ice
In a cocktail shaker (or Mason jar if you don’t have a shaker), muddle the mint leaves.
Add the lime juice, syrup and gin and fill with cocktail shaker with ice. Shake until cold.
Place ice into a glass, and strain in the drink.
Top off the glass with soda water and garnish with additional mint leaves and lime wedges.
